Last night I got the chance to meet award winning mixologist Roberto Rosa, learn more about Diplomatico Rum and was introduced to his A Hop, Skip and a Jump Cocktail at NYC’s Eastside Cantina (amazing ceviche!). When the cocktail was given to my fellow wine and spirits writers, there was a collective, “Oooh!” The concoction is gorgeous. It’s a sunny yellow brew that smells like summer and is delish.
Sadly, I’m allergic to mango, one of the drink’s ingredients. Roberto whipped up another cocktail on the fly, so that I would be able to taste the combination of the Diplomatico Rum Reserva and Barrow’s Intense. The drink was so fantastically smooth and refreshing that I begged him to write down the recipe so that its joy could be shared.
