Penicillin-tense | Barrow's Intense Ginger Cocktails

The Penicillin is a classic cocktail created by Sam-Ross in the mid 2000's in the famous Milk & Honey bar in New York. A Penicillin typically has Scotch Whiskey, fresh lemon, and some form of ginger and honey. We like to add our own intense spin on the Penicillin with our spicy homebrewed Ginger Liqueur. The spice in the ginger liqueur mixes perfectly with the smoky Scotch. The Whiskey, sweet honey syrup, and sour lemon balance the drink, allowing the intense ginger to make an appearance. This drink round our to a smoky, sweet, tart, and spicy drinking experience.
Ingredients
- 2 oz. Monkey Shoulder Blended Scotch Whisky
- .75 oz. fresh lemon juice
- .75 oz. honey syrup
- .5 oz Barrows Intense Ginger Liqueur
- .25 oz. Laphroaig Islay Single Malt Scotch
Instructions
- Shake all but Islay Scotch together with ice and strain into a glass.
- Float smoky scotch on top.
